Cuando llega esta época de primavera y verano no hay nada mejor para la cocina que usar los ingredientes frescos de temporada. En las recetas de hoy nuestros protagonistas son los vegetales, con lo cual nos beneficiamos todos.

Creo que fue en Asturias donde comí por primera vez los garbanzos con bacalao. En esa ocasión la receta traía espinacas y me sorprendió la delicadeza del sabor del bacalao en ese potaje de garbanzos. La clave estaba, por supuesto, en desalar el bacalao pero además en la espinaca que habían entrado al plato a mediar entre los sabores.
